I pulled this recipe from the July 2015 Better Homes and Gardens and made it for dessert yesterday. It was so good. Pictured is the small dish I prepared for myself with dairy-free chocolate. I made a huge pan of it with milk chocolate for everyone else. And even with the two separate dishes, I had enough ingredients without modifying the recipe.
Strawberry S'mores Cobbler
1 sleeve whole graham crackers (9-10 rectangles)
3 oranges
1/4 C sugar
2 T cornstarch
2 lb fresh strawberries, hulled and quartered
16 to 18 large marshmallows
2 oz milk or dark chocolate (pieces of a chocolate bar or chips)
1. Preheat oven to 400*. Coarsely crush crackers into a 2-quart, round baking dish. Set Aside. Finely shred 1 tsp peel from orange. Juice oranges for 3/4 C (I actually used store-bought OJ 'cause ain't nobody got time for that).
2. In a large saucepan stir together orange peel, juice, sugar and cornstarch; cook and stir until thickened and bubbly. Stir in strawberries. Spoon berry mixture into dish, covering crackers. Top with marshmallows and chocolate, lightly pressing marshmallows into filling.
3. Bake 10 minutes, or until marshmallows are golden. The recipe suggests serving warm, but I found it was MUCH more delicious after sitting on my stove for an hour... not that I came back to it and dove in with a spoon after putting Lincoln to bed...
I'm really glad I attempted this, and that it was so easy to make a dairy-free version. I think this could also be awesome with peaches and/or blueberries. I wish I'd been making versions of this all summer.
